I began experimenting with making pepper sauce in 1999. Being a typical Chili Head I was growing my own peppers and found that I had a pile of peppers in the fall (since I had almost 300 plants). Making a good hot sauce was the way to use up some peppers.
In my own mind I am somewhat of a hot sauce connoisseur. So I knew I wanted something more than a typical vinegar based sauce and not a pepper extract sauce. I was searching for an everyday sauce. The one you reach for every time you open the refrigerator door. After much trial and error a sauce emerged that seemed to please everyone with it's flavor. I bought some bottles and started bottling it up for my friends and then their friends and after years of making more than I wanted to as a hobby my wife said, maybe we should start selling it.
We built an FDA approved facility, completed the schooling and training classes required to produce sauce commercially and here we are.
